I was reading my past posts and realized that I am always in a hectic situation.
I have to sit down and learn to breathe. Between the recording, filming and writing my social life has gone down the toilet. But who am I kidding? I love being busy. The point here is that I have to squeeze in time to do other stuff and relax a little.
That being said, I am going to share with you guys a recipe that is quick, easy and once you learn it, it never fails. So when you find yourself in a busy (or lazy) day, this is your solution.
I made this and Jimmy loved it. This is my no-fail, fool-proof recipe. Let’s take out some tomatoes and let the magic begin!
- 1 1/2 cups cherry tomatoes
- 1 cup tomato puree ( I was feeling kind of lazy and used the canned version and I also had half tomato which I grated and added it too)
- 2 garlic cloves
- 2 tablespoons olive oil
- handful of chopped basil leaves
- Pasta of your choice (I used glutten-free)
- In a pan saute the garlic with the olive oil.
- Chop the cherry tomatoes in half (easiest way to do it) and add them with the tomato puree in the pan. Let simmer for 15 minutes. Add the salt and the chopped basil.
- In a big pot boil enough water for two portions of pasta, and add salt to the water. Once the water is at bowling point, add the pasta an let cook as instructed on the packaging. Once the pasta is cooked drain it and serve with the sauce.
- Easy, breezy… pasta al pomodoro. Enjoy!
Jimmy and I make a pretty good musical team. We try to separate our personal lives when we are working and that is what keeps things interesting. We disagree in many things and it’s funny how we work together. In the last couple of years Jimmy became my producer and I felt really comfortable with it because he know exactly what music I like and how I want my tracks to be. Last year we decided to make a project together called «12/20» and I want to share with you guys our first single called «Bomba de tiempo» that in Spanish means «time bomb».
Our dear friend Dennis Nieves from «Dmenace Music» produced this track. He is a fantastic producer and working with him is more fun that work. I hope you guys enjoy the song as much as we did recording it.
There are certain dishes that my mom made when I was a child that I still love to eat today. Every time I smell basil or tomato sauce, I jump back to 1994 in a second.
My dad loved «Bruschettas» and the classic «Pasta al Pomodoro». With time I started to love them too. Those where the good times when I used to eat as much as I wanted. Lately, I have been under a lot of stress and I find myself craving those meals. I can understand why they call them «comfort foods».
Two weeks ago I shared my favorite Greek foods and today I will share my Italian comfort foods. I can’t have them often because of my migraines but I do cheat from time to time.
1) Bruschetta. This is simple, fresh and delicious. There are tons of different types of Bruschettas but I like the classic one. I always make it when I have unexpected guests over because I always have the ingredients at home. Sometimes I make some gluten-free bread and it tastes like heaven with the tomato and basil.
2) Risotto ai funghi porcini (Mushroom risotto with Porcini). This is a fantastic alternative to pasta. When I was little I used to sprinkle so much Parmesan cheese on this meal that my mom used to tell me «Natascia you are not eating risotto with a little Parmiggiano, you are eating Parmiggiano with a little risotto».
3) Pasta al pomodoro. This is my ultimate comfort food and I love it madly. I am not kidding. I could eat this everyday for the rest of my life. I cook this sauce with gluten-free pasta but I also found a great alternative with zucchini noddles.
4) Rosemary focaccia. I don’t have to explain how delicious this is. Be prepared to jump of excitment: here is a gluten-free version.
5) Nutella. This one is obvious right? Let’s all dedicate a minute of silence to the Ferrero Company for inventing such a delicious, decadent and addictive desert since 1964. For me nothing compares to this. Period. If it wasn’t for my migraines I would have it every day. (After the pasta al pomodoro obviously.)
